Peel and filleting sardines, by removing the central bone. For easy filleting, salt the sardines 3-4 hours earlier and leave in the refrigerator. Wash the vegetables and chop into small cubes. Add salt and pepper and mix all the chopped vegetables. In a pan, covered with greaseproof paper, place half the sardines with skin downwards. Up to these, place a small amount of vegetables and cover with the remaining sardines. If you have left over vegetables, place them in the pan to cook as well.
