The Mediterranean diet is famous for all the beneficial effects on the human body, health and well-being. Feature of this diet, is the abundant consumption of fruits and vegetables, which are affluent in the Mediterranean countries, and have a superior taste. For the reasons above, a feature of Greek cuisine, is the creation of dishes entirely with vegetables or legumes, without necessarily combining them with a protein. Such dish is my roasted vegetables with feta cheese! Daily food? Yes. Extremely tasty? Also yes! even you’ re a meat lover, you ‘ll still like it!!!!
The process is simple: Wash thoroughly zucchini and cut into rings. Peel, wash and cut into rings the potatos as well. Finally, cut with your hands the pleurotus mushrooms into medium size pieces. Place all your components in a baking dish. Add the lemon juice, olive oil, salt, pepper and herbs. Mix with your hands to spread everywhere spices. Bake in a preheated oven at 200ºC in air for one to one and a half hour. In the intermediate stir with a spoon the vegetables to brown all.
