Hello again! This week, I chose to upload a simple recipe on the blog, without lots of ingredients. It is a recipe for very crispy and aromatic potatoes, which can perfectly accompany any main dish with meat you choose to make. They are the ideal solution for a festive table, when you don’t want to fry potatoes at the last minute, they are healthier as they are roasted, and they are really delicious! Outwardly they form an extra crispy crust, while inside they remain soft and actually melt in the mouth! Their secret? Before baking, boil for a few minutes in alkaline water! Crispy Herbs and Garlic Roasted Potatoes

- ○ 4 medium sized potatoes
- ○ 1 tsp. baking soda
- ○ 2 tbl. butter
- ○ 2 tbl. olive oil
- ○ 2 sprigs of fresh rosemary
- ○ 2 sprigs of fresh oregano
- ○ 2 cloves of garlic
- ○ Salt
INSTRUCTIONS
In a pot, add 1.5 liters of water to boil. Once the water starts to boil add 1 teaspoon of baking soda and plenty of salt.
In the meantime, thoroughly wash the potatoes, along with their peel, and cut them into chunks. Add them to boiling water.
At the same time, in a small pan add the butter, olive oil and herbs. (garlic, rosemary and oregano). Place the pot on a strong fire until the garlic and the aromatic herbs turn brown. Drain the aromatic oil with a strainer.
After about 10 minutes (the times depend on the potato kind), when they have softened but they are not cooked yet, remove from the heat and drain the potatoes in a colander.
Stir the potatoes in the strainer for a while so their surface becomes irregular. This is the property that givew then the boiling in alkaline water. It makes their cells disintegrate, so this irregular surface that is created, will eventually give our potatoes their very crispy crust.
Preheat the oven to 200 ° C in the air. Transfer the potatoes to a baking sheet covered with baking paper, Springle them with the aromatic oil, add salt and place in the oven.
Meanwhile, stir the potatoes to cook on all sides. Once golden, remove from the oven and enjoy!
