I’m thinking… How fast the time passes…. It seems to me like it was just yesterday, that we adorned the Christmas Tree… And these days, we are making our preparation for the Carnival. Carnival is a festive period before the start of the Great Lent, that people have fun, wearing masks and costumes, and it is common to consume meat, alcohol and pies. For the celebration of the first day of Carnival it is used to make barbecues, but because the first day is always Thursday, it is sometimes a little difficult to celebrate with a barbecue party. For that reason I recommend for you, a great traditional greek recipe for slow cooked pork bites with veggies! Its preparation consumes only ten minutes of your time, and the oven makes the rest! It’s really delicious!
Slow Cooked Pork Bites with Veggies

- ○ 2 red peppers
- ○ 2 green peppers
- ○ 2 medium tomatoes
- ○ 1 large onion
- ○ juice from a lemon
- ○ 150g regato in cubes
- ○ some olive oil
- ○ Salt, pepper, oregano
INSTRUCTIONS
Cut peppers, onion and tomatoes into thin slices, or sticks, and our cheese in cubes.
In a casserole -or alternatively if we want to make individual portions or do not have a casserole, use a lot of non-stick baking paper and make packets- place the meat and cut vegetables. Add salt, pepper, oregano and some olive oil and mix all the ingredients together.
Bake for about 90 minutes at 170 ° C on the resistors. Then open the caserolle, add lemon juice and a cheese, close and continue cooking for half an hour, until the meat and the cheese are golden.
In case our food has a lot of juice from the vegetables. open the casserole lid and bake for a few more minutes so as the excess fluids to be evaporated.
Accompany with fried potatoes or mashed potatoes and lots of bread!
