Rice pudding is a traditional dessert, eaten for years and years by every Greek family! It is a light and nutritious dessert, without a lot of sugar and fat, which can comfortably be eaten as breakfast, since it supplies the body with essential nutrients to start the day! This versions, made with soy milk is a more light option, ideal for those on a diet or fasting. If you don’t prefer soy milk, you can replace it with almond milk or any other plant milk. In a pot place 1/2 cup of rice with three cups of water and boil the rice. Once all the rice is boiled, add to the pot, 4 cups of soy milk, sugar, vanilla and two lemon peels. Hold one cup of soy milk aside. In a bowl, mix the corn starch with 1 cup soy milk which had kept aside. Once the milk in the pot begins to boil, add the diluted corn starch, lower temperature and stir constantly with a wooden spoon. Once the rice pudding thickens, remove from heat and serve in bowls.
