Who does not like fried, delicious and fluffy schnitzel with vienea sauce? But nowadays for nutritional reasons, we avoid such fatty foods … The cream season is over, let’s admit this fact, and these foods tend to disappear from our dietary routine… This idea came up in my attempt to modernize and make more hygiene a favorite recipe of our childhood! Oven baked schnitzel with a creamy, delicious mushroom sauce, made with drained yogurt! Delicious, refreshing, tasty dish and especially healthy and hearty as well! Accompany it with some rice flavored with turmeric and enjoy without guilt!
Oven Baked Schnitzel with Yogurt- Mushroom Sauce

- ○ 4 pork schnitzels
- ○ 4 eggs
- ○ flour for covering
- ○ toasted breadcrumbs for covering
- ○ 500 g mushrooms porto bello
- ○ 1 onion
- ○ 3 tbsp olive oil
- ○ 300 g strained yogurt
- ○ salt-pepper
- ○ finely chopped parsley
INSTRUCTIONS
Salt and pepper the schnitzel. In a bowl, beat eggs very well. Place in a bowl the flour and the bread crumbs and put the bowls in a row. First the flour, then the egg and finally the breadcrumbs.
Dip one schnitzel at a time, first in the bowl with the egg, then into the bowl with the flour, again the bowl with the egg and finally in the bowl with the breadcrumbs until well covered.
Transfer to a baking dish, covered with baking sheet and bake at 180 ° C in the air until golden brown.
As the schnitzels are baked, continue with the preparation of the sauce. Cut the mushrooms into thin slices and finely chop the parsley. In a non-stick pan put 3 tablespoons of olive oil and a medium onion finely chopped. Steaming onion for 2-3 minutes.
Add the mushrooms and stir constantly until lightly browned. Remove from heat and after 2 minutes add yoghurt and parsley.
Serve the grilled schnitzel, covering them with the mushroom sauce. They are well served with rice flavored with turmeric or potatoes!
