Once cooked flour for a few minutes, lower the temperature and add the warm milk gradually, stirring constantly until the cream thickened. Add a pinch of nutmeg. Remove from heat, add the grated cheese and stir. Leaving the sauce aside to cool.
Cut 4 slices of bread, spread some butter on them and place in a preheated oven at 200 ºC until lightly browned. alternatively you can use the toast bread.
Take the slices of bread from the oven and place on both of them, some cheese bechamel to cover their surface. Then place two slices of Gouda cheese, two slices of ham and one slice of bacon. Continue by covering with second bread slice.
To make a croque monsieur, cover the second slice of bread with bechamel sauce and the croque madame sandwich by leaving the second slice without a bechamel layer. After this process bake our sandwiches again until golden. Meanwhile make an egg eye either in the oven or in a nonstick pan with little oil. After the sandwiches are golden brown, take them of the oven. The Croque Monsieur is ready while serving the croque Madame the egg eye on it.
