For the cake
- ○ 3 cups of grated carrots
- ○ 4 eggs
- ○ juice of half an orange
- ○ 2.5 cups of self raising flour
- ○ 1 cup sunflower oil
- ○ 2 cups of sugar
- ○ 1 cup of walnuts
- ○ 2 teaspoons baking soda
- ○ 2 teaspoons baking powder
- ○ cinnamon, cloves, ginger
For the glaze
- ○ 250 g. margarine at room temperature
- ○ 400 g. cream cheese
- ○ 1.5 cups powdered sugar
INSTRUCTIONS
In a bowl, mix the eggs with a hand whisk, slowly add the oil while stirring, then add sugar.
Squeeze half of orange, add in the juice the baking soda and stir until frothy. Then mix this, with the mixture of eggs and sugar.
In a bowl mix the flour, baking powder and spices and add these in our continuing stirring mixture.
Finally add the grated carrots and the ground walnuts. Grease a round pan with removable bottom diameter 28 cm and pour into the cake mixture. Bake at 170 ° C for one hour.
After you remove the cake from the oven, let it cool completely. Then remove the cake from pan and cut across the cake with serrated knife. After finishing this process proceed in the preparation of glaze by mixing up margarine which is at room temperature with the powdered sugar and cream cheese. Cover a portion of the cake with half of the glaze, Place the second piece of cake, and finally the remaining glaze. Decorate with sliced carrots and walnuts.
NOTES
tips: For successful cake do not open the oven before the end of 30 minutes. To check if our cake is baked, dip a toothpick or a knife in the center of the cake. If there are no dough residues on the knife when we withdraw it then the cake is ready.
