- ○ 6 chicken drumsticks
- ○ 1 large onion, chopped
- ○ 1/3 cup olive oil
- ○ 1 cup red dry wine
- ○ 2/3 cup tomato sauce
- ○ 2 bay leaves
- ○ 4-5 allspice berries
- ○ 1 cinnamon stick
- ○ 1/4 teaspoon nutmeg
- ○ 1 teaspoon sugar
- ○ 300 g. noodles
- ○ Salt, pepper
INSTRUCTIONS
Chop the onion into small cubes. In a nonstick pan put olive oil and when it warmed up saute chicken drumsticks, turning them until brown on all sides.
Then add the onion and saute it until golden. Add the red wine and let it boil for 2-3 minutes, so as alcohol to be evaporated. Continue adding the tomato sauce and spices.
After our food begins to boil, add 2 1/2 cups of water, cover with a lid and lower the temperature at 5 to 6. Allow to boil for about 45 minutes. After this time the chicken will be cooked and sufficiently soft.
At this stage, if necessary, add a glass of hot water and when it boils pour in the noodles. Continue boiling until the liquid is evaporated and pasta is cooked.
Serve with grated pecorino.
