Tagliatelle al' Fungi

- ○ 700 g. Pleurotus mushrooms
- ○ 500 g. tagliatelle
- ○ 30 g. butter
- ○ 150 g. grated graviera cheese
- ○ 1 glass of white wine
- ○ 1 clove of garlic
- ○ 2 sprigs of thyme
- ○ Salt, pepper
- ○ parsley
INSTRUCTIONS
First chop the mushrooms and grate the graviera cheese. In a nonstick pan, slightly heat olive oil and saute the mushrooms and a clove of garlic until golden brown. Once they get a golden-red color, add the white wine. Add the thyme and season.
At the same time in a casserole, boil water and pour in the tagliatelle to boil. 2 minutes before tagliatelle are ready, transfer them with a slotted spoon into the pan with the mushrooms. Add some of the water in which they boiled. Lower the temperature in the middle of the scale that appears in the kitchen. Add the butter and graviera cheese and stir. Finally add the parsley.
Garnish every dish with grated graviera cheese and chopped parsley.
