It is in the Greek mentality to make croquettes with almost anything … Meat, fish, legumes, vegetables … Even the most humble materials, combining with lots of herbs and spices, turn into delicious appetizers …Combined with ouzo, or your cold beer, try this recipe for delicious potato croquettes! The only sure? There won’t remain a bite!
Potato Croquettes

- ○ 2 medium potatoes
- ○ 60 ml of milk
- ○ 1 tablespoon butter
- ○ 1 egg
- ○ 100 g. feta cheese
- ○ 1-2 green onions chopped
- ○ chopped parsley
- ○ 1 pinch of oregano
- ○ 1 cup breadcrumbs
- ○ Salt, pepper
- ○ oil for frying
INSTRUCTIONS
Peel the potatoes and cut them into small pieces to cook quickly. Place them in a saucepan with cold water and boil until tender. When the potatoes boil drain the water, mash with a fork or with the special tool, add milk and butter and mix until you get a tight puree. Allow the mixture to cool. Then add the grated cheese, herbs, onions, egg, salt and pepper.
Mix all the ingredients together to create a mixture which can be formed into small balls. If the mixture is too soft, add some breadcrumbs. Finally coat their potato dumplings with breadcrumbs and fry in hot oil.
