Beef Stuffed Cannelloni

for the tomato sauce
- ○ 1 medium onion
- ○ 2 cloves garlic
- ○ 4 tablespoons olive oil
- ○ 1 tablespoon sugar
- ○ 200 g. tomato juice
- ○ Salt, pepper
For the cannelloni
- ○ 20 cannelloni
- ○ 750 g ground beef
- ○ 1 onion chopped
- ○ 1 carrot, finely chopped
- ○ 100 g of tomato juice
- ○ 3 tablespoons olive oil
- ○ 2 bay leaves
- ○ 3-4 allspice berries
- ○ 200-250 g grated gruyere
- ○ 1 cup evaporated milk
- ○ Salt, pepper
INSTRUCTIONS
Grate the onion on the grater and chop the carrot into small cubes. Put 3 tablespoons of oil in a nonstick pan and sauté the onion. After 2 minutes add the carrots and stir constantly until browned. Then add the minced meat and stir, trying to break the single body of meat into small pieces. Once minced change color, add 100 g. tomato juice saute for 2 minutes, and then the spices and 2 cups of hot water. Reduce temperature and let it boil until liquids reduced.
At the same time in a small saucepan, add 4 tablespoons oil and saute the second onion, grated, and the garlic. Once they get golden, add 200 g. tomato juice and stir for 1-2 minutes. Add the sugar, salt and pepper, and 2 cups of water and let it boil until thick.
Once minced left only with the oil, add one cup of evaporated milk, and half of gruyere and stir. Remove the pan from the stove and leave the stuff come to room temperature. Place a layer of the tomato sauce in a baking pan. After stuff cool, fill the cannelloni with a small spoon, pushing if necessary the filling with the back of spoon. Place the cannelloni onto the layer of tomato sauce alongside one another. Drizzle with the remaining tomato sauce and add the rest of gruyere. If the sauce is quite thick, add 1 cup of warm water. Bake in a preheated oven at 170ºC in air for 30 minutes, or until golden brown.
NOTES
TIPS: If cannelloni is golden brown but it's not cooked yet, cover with silver foil and bake for 10-15 more minutes.
